UNA pays homage to Spanish gastronomy's heritage with an innovative menu that blends authentic signature dishes from Southern Spain with heartier fare from the North. We extract wholesome and robust flavors using modern cooking techniques and prioritize locally and regionally sourced fresh produce.

UNA is proud to announce Michelin-starred chef Diego Grimberg as our Culinary Advisor. Chef Diego's experience includes launching Albert Adrià’s Michelin-starred restaurant Enigma in Barcelona and leading Hofmann Restaurant, known for its Catalan cuisine and shaping future Spanish chefs. Chef Diego will also mentor upcoming chefs at UNA.
