Chef Rio Neo: A Culinary Journey

Chef Rio Neo's culinary journey began at his parents’ humble bee hoon stall, instilling in him a deep respect for ingredients and the kitchen's rhythm. He refined his skills at renowned establishments such as Fat Cow, Kinki, and Kabuke, mastering Japanese techniques while cultivating a distinctly Singaporean sensibility. At TANOKE, Chef Rio brings together traditional washoku traditions and contemporary creativity, balancing elegance and comfort with bright, umami-forward flavors and clean presentations, thoughtfully paired with fine sake. Recognized as a finalist at Japan’s World Washoku Challenge in both 2015 and 2016, Chef Rio continues to push boundaries with innovation while celebrating heritage and the joy of dining together.

Modern Japanese Dining at TANOKE

At TANOKE, modern Japanese dining comes to life under Chef Rio’s mastery, where traditional techniques meet innovative flavors. Each dish is designed to bring out the best of premium ingredients while offering a fresh take on Japanese culinary traditions. At the heart of the kitchen is the Shichirin Binchotan Grill, which uses high-grade white charcoal for precise, high-heat grilling. This enhances the natural flavors of prized cuts such as Sanchoku Wagyu A4 Miyazaki Ribeye and A5 Kyushu Tenderloin. The menus also feature delicate creations like Hokkaido Hotate Carpaccio, Otoro Aburi Handrolls, and Wagyu Sourdough dishes that balance elegance, umami, and creativity in every bite.

Really enjoyed my lunch here at Tanoke. Tried the lunch sets and added on the karaage. The sake flight was interesting and good - had one with a hint of banana in it and you can taste it so I found it quite interesting. Karaage was huge and crispy, pairing well with the accompanying sauce. My favourite beef cut was the tenderloin, was a good mix... see more

First time here to celebrate our anniversary. Made a reservation to indicate for a nice corner seat if possible, and it was sweet that the request was fulfilled. We both opted for the lunch set. The wife had the black cod, which was surprisingly delicious. I'm not sure what the sauce was, but it was rather unique and palatable. I opted for the wagy... see more

The atmosphere was nice and the staff were friendly, but overall, the experience didn’t quite live up to the price. One feedback was the way the food was served — everything came out as one big portion to share, which felt a bit awkward. It would’ve been much better if each person got their own individual serving, especially for a set menu. Also,... see more

Had a wonderful dinner here on a Wednesday night. Service was prompt yet unobtrusive, and we could chat comfortably over the meal. Food was yummy and serving size was adequate. Will definitely return!

I found this restaurant on the American Express love dining promotion list, and decided to give it a try. First impressions are that the atmosphere and decoration is beautiful. The dark blue and red contrast perfectly. The service is also good but the food started to taste all the same where everything was salty, and there was this Cajun powder tas... see more

We thoroughly enjoyed our dining experience here! The dishes were delicious, and we were particularly fond of the grilled mushrooms, carpaccio, etc.- just to name a few highlights. The staff were friendly and attentive, making our visit even more special. Overall, we had a fantastic time. Amex card holders enjoy 20% off, which is a super plus point... see more
